In the Kitchen


Dinner tonight 

Cornbread waffles 
1 cup all-purpose flour
1 cup cornmeal
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 large eggs
1 cup buttermilk
1 cup club soda
1/3 cup canola oil
cooking spray

Sift together first 5 ingredients in a large bowl. Combine eggs and next 3 ingredients; gently stir into dry ingredients just until blended.

Spray waffle iron with cooking spray.  Spoon batter onto preheated waffle iron. Cook 3-5 minutes or until crisp and done. Repeat with remaining batter.

Transfer waffles to a baking sheet, and keep warm, uncovered, in the oven at 200° until ready to serve. Waffles can be frozen in zip-top freezer bags and reheated in oven or toaster oven.

Makes 16 - 4" waffles

WITH

Chili on top


1 can diced tomatos 
1lbs ground turkey
1 can kidney beans
1/2 cup frozen corn
hot sauce to tast OR chili powder to tast 

fry up the ground meat (you can use whatever meat you would like)
drain the beans and mix everything togeather including the juice from the tomatos. 
season with salt pepper and chili powder.
bring to a boil and reduce heat to at least half for approximatly and hour or longer.


I feel as if I've lost my 1950's Housewife ness and I am determined to get it back. take a lemon Cut 1/4 off the top 
stick a peppermint stick in the lemon 
as you are sucking the juices out of the lemon the peppermint still will hollow and makes for an amazing treat! 



These will be amazing for the summer party i am having or just drinking by the pool! ENJOY <3


HINT: If you dont have any peppermint sticks laying around from the holidays try the Bulk Barn they have all sorts of different flavored candy sticks.




 Irish Soda Bread





4 cups flour


1 teaspoon baking soda

1 teaspoon cream of tartar

3/4 teaspoon salt
1/2 cup sugar
6 table spoons soften butter
1 3/4 cup buttermilk
Extra buttermilk to brush on loaves before baking

Rub loaves with extra buttermilk, place on greased & floured baking sheet then bake at 375 for 1 hr or till golden brown

 Reuben/Corned beef sandwiches 


Makes 3 sandwiches 
for my corned beef sandwiches I used sesame seed hamburger buns 1 package of deli corned beef 2 slices of swiss cheese on each and some mayo. I put them all togeather and then I fried them up like you would make a grilled cheese sandwich. 

I really wanted to make Reubens with the dip etc. BUT I unfortunately didn't have all the ingredients so myself my husband and my brother had these instead and my Brother LOVED them!

As you can tell I flattened mine out so that we could fit them into our mouths but they were so good and juicy!

AND for desert!!


This is not my picture but it looked the same in my skillet as it does in this one! We kind of forgot about them after dinner was done so I think I might make them again tonight so we can actually try them :)

But here is the recipe (it is so easy!)

4 Bananas halved long ways
1/2 C Irish Whiskey 
1/2 C Butter
1/2 C Brown sugar 

Melt the butter in a skillet over medium heat. Stir in the brown sugar and whiskey. Bring to a boil and cook until sugar has dissolved. Add bananas to the skillet and simmer gently until bananas are tender and glazed with the syrup. Serve immediately with vanilla ice cream.

Classic Irish Boiled Dinner 



I eyeball alot of my soups and stews so I will try and give you a more accurate amount but just remember when your dealing with stews and vegetable soups it really doesn't matter how much veggies you put in the only thing that really matters is what you use to thicken your stews. We aren't making stew today though, this is an Irish Boiled soup!

first you want to start off by adding 2 beef bullion cubes to a large pot of water then add


1C frozen corn

2C frozen green beans 
1/2 head of cabbage
5 carrots (skins off and slivered)
salt and pepper to taste

then after that has been cooking for a while you want to fry about 2lbs of stewing pork.

start to brown the pork (But do not cook fully) then add about 1oz of Irish Whisky to the pork. Put a lid on the pan and continue cooking until its pretty much done. Then you will add the pork to the soup mixture and continue boiling for 20 minutes or so. then it is ready to serve!  

And the verdict is..... AMAZING!!! My husband and brother LOVED it and even wanted more!
