St. Patricks Day Day 4

St. Patrick's Day 
Day 4 


Today I thought I would do something a little different I thought I would share all of my Irish/St. Pattys Day recipes since i will be having my brother and sister in law over for a small St. Pattys Day get together tomorrow I hope you enjoy!
+St. Pattys Day Bath Salts DIY and What is your Leprechaun name?

Potato Candy 

1 potato (medium)
2 1/2 powdered sugar (approximately)
1/4 cup peanut butter 

Boil the potato until it is soft let air dry for a minute or so. 
Blend the potato until smooth
add powdered sugar 1/2 cup at a time sprinkling into the potato 
keep adding the powdered sugar until the mixture becomes a stiff dough
place wax paper on a work space (save yourself and rub a very thin coat of butter on the wax paper)
press out the dough into a square (not to thin) about 1/2 inch-1 inch thick 
spread peanut butter over the entire dough square
lift up the corner of the wax paper and begin to roll 
after you have rolled it into a log roll it up into wax paper and refrigerate for an hour
take out of the wax paper and cut slice candy into cross sectional pieces approximately 1/2-3/4 inch thick  



Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
2 cups zucchini, grated
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
3 cups flour
1/2 teaspoon cinnamon
1 cup Hazelnuts  (optional)

Directions:

Beat eggs until frothy. Mix in oil and sugar. Blend in zucchini.

Sift together dry ingredients. Stir into zucchini mixture.

Add vanilla and nuts.

Pour into two bread pans.

Bake at 350 for 45 minutes OR until a toothpick inserted comes out clean.
I used 1 loaf pan and 1 1/2 muffin pans  the muffin pans take less time to bake so make sure you watch them 


Irish Tea Cakes

1 Cup Salted Butter
1/2 Cup Confectioner’s Sugar
2 Teaspoons Pure Vanilla Extract
2 Cups All-Purpose Flour
1/4 Teaspoon Salt


Preheat oven to 325F.

Cream butter and sugar with an electric mixer. Add vanilla.

Beat in flour and salt till thoroughly combined. Roll dough into 1 inch balls and place 1 inch apart on lightly greased cookie sheet.

Using the second knuckle of your index finger, make a depression in the center of each ball.

Fill with Jam

Bake 18 minutes or until golden brown. Remove from pan immediately to a cooling rack.

When completely cooled, dust lightly with confectioner’s sugar.

Yield: 2 dozen.

Cherry Cordial Cookies



Ingredients:

3 Cups All-Purpose Flour
2/3 Cup Unsweetened Cocoa Powder
1/2 Teaspoon Baking Soda
1 Cup White Sugar
1 Cup Light Brown Sugar, firmly packed
1 Cup Salted Butter, softened
2 Large Eggs
2 Teaspoons Vanilla Extract
Maraschino cherries

Preheat oven to 400F.

In a medium bowl combine flour, cocoa and baking soda. Set aside. Combine sugars in a large bowl. Using an electric mixer, blend in butter, scraping down the sides of the bowl.

Add eggs and vanilla, and beat at medium speed until light and fluffy. Add the flour mixture  and blend at low speed until combined. Batter will be very stiff. Roll dough into 1 inch balls and place on un-greased baking sheets, 2 inches apart.

With the 2nd knuckle on your index finger, make indentations and fill each one with 1 whole cherry. Bake 8 to 10 minutes. Cool on pan 2 minutes, then transfer to a cool, flat surface.

Makes Approximately: about 5 dozen



Green Rice Crispy Treats




Ingredients: 

1 package regular size marshmallows
3 tablespoons butter
6 Cups rice crispys
6 drops of green food coloring (or more if you would like)

Directions:

in a pot heat the butter to melt 
add marshmallows 
after marshmallows are almost melted add food coloring and then after they are completely melted add rice crispys 
mix well
butter a baking pan or whatever you might want to put them in
 put a little oil on your hands and press the rice crispys into shape
let cook then cut.
OR 
Roll into rice crispy balls
ENJOY!

Sheppard's Pie


 

Ingredients:

1 lbs ground beef
1/2 cup peas
1/2 cup cubed carrots 
1/2 Corn
mashed potatos 
Cheese ( I used monterey jack with jalapenos thats all I had and it tasted GREAT!)
1 Beef bouillon cube
1 cup water
flour 
Salt and Pepper 

Directions:

make your mashed potatos 
cook your veggies
Fry your meat up and drain
make your gravy 
through it all together in a casserole dish except the potatos and cheese
mix well 
add potatos around the top of the beef mixture leaving a hole in the middle 
add your cheese on top 
then bake for 30 minutes at 350 degrees Fahrenheit


Gravy Recipe:

(I added onions to mine but you dont have to IF you would like add one small onion chopped up)

Ingredients:

1 beef bouillon Cube 
1 cup of water 
flour 
a little extra salt if needed

boil the water with the bouillon cube 
when the cube has dissolved and the water is at a raring boil take a whisk and whisk the water while sprinkling a tablespoon of flour at a time until the water becomes slightly thicker remove whisk turn heat down and let boil on medium heat for approximately another minute or so and then add to your Sheppard's pie when ready
OR
use for fries and gravy mashed potatos or anything!  




Mashed Potatos Recipe:


Ingredients:

4 medium potatos
1/2 Cup Milk
1/3 cup of butter
salt and pepper

Remove skin from potatos 
cube


boil potatos until soft


in a microwave safe bowel put in milk and butter place in the microwave for 2 minute (watch it though it will overflow) 
drain potatos and let dry for a minute
blend potatos 


while blending add milk and butter concoction slowly until the potatos become fluffy add salt and pepper.
AND Tada mashed potatos (the extremely yummy way!)

The Sheppards Pie was our Dinner But for Lunch earlier that day we had Bangers and Mash
A.K.A
Sausages, Mashed Potatos and Gravy

using the above recipes for the mashed potatos and gravy

to cook your sausages add about 1/2 a cup of water to a frying pan place sasages in, Cover, and cook on medium heat until the juices run clear.

Here was our Lunch



St. Patty's day 
Bath Salts 


What you will need:


herb grinder
1 Jar to store your salts in
2 packets of green tea 
2 Tablespoons of Lavender 
1 Tablespoon Chamomile
1 cup Sea salt
1 cup Epson salt   

Green food coloring
1 Shamrock sticker
some gold ribbon
cream colored felt

Directions:


Put green tea (taken out of the tea bag), Lavender, and Chamomile into grinder 


Grind until it is almost a powder



add 7 drops of green food coloring to the Epson salt


Place Herbs into the Jar



Place Salts into the Jar 



Shake


Cut Felt to appropriate size tie gold ribbon to hold the felt on add the Shamrock on the front of the Jar and there you go!


It will not color your tub ^^ is a picture of my tub water after adding about 3/4 cup of salts to tub
it will color your water sightly but will not harm your bathtub!
